Mild Chicken Curry with Sultanas and Pineapple



Ingredients (Metric)
350g chicken breast, cut into cubes
½ tsp peanut oil
1½ tsp ground turmeric
½ tsp ground cumin
¼ tsp ground cayenne pepper
¼ tsp ground ginger
¼ tsp ground coriander
100ml water
½ chicken stock cube
285ml single cream (I used a pot of Elmlea single)
50g sultanas
75ml pineapple juice (from the can of pineapples)
160g canned pineapple
(I prefer to use a can of pineapple rings and cut them into chunks - I get more that way)

Imperial
14oz chicken breast, cut into cubes
½ tsp peanut oil

(Super-Cheese!) Vegetarian Lasagne



Ingredients
2 large mushrooms (100g)
1 small zucchini (85g)
1 small carrot (35g)
1 clove garlic
1 tsp olive oil
400ml canned tomato juice
(13⅓ fl. oz)
170ml light evaporated milk (5
fl. oz)
20g butter (1½ tbsp)
20g plain flour (1½ level tbsp)
200ml water (7 fl. oz)
170g mature cheddar cheese (6 oz)
¼ tsp dried basil
¼ tsp ground white pepper
lasagne sheets, about 9

Beef Stew with Lager

I had no red wine left with which to make a stew, so after checking in cooking about whether lager would work well instead, I came up with this recipe. I'll definitely used lager instead of red wine next time - it softened the meat so much it melted in my mouth.



Ingredients
300g beef, cut into chunks
500ml lager
2 tsp tomato paste
2 tsp Dijon mustard
pinch hot chilli powder
200ml chicken stock
2 medium carrots, cut into rings (about 100g)
2 large potatoes
, cut into large chunks (about 400g)
½ tsp peanut oil

Spicy Vegetable & Noodle Stir-Fry with Coconut Milk



Ingredients:

2 small carrots, cut into sticks
2 small zucchini, cut into sticks
80g fava beans
50g corn
½ tsp peanut oil
165ml light coconut milk
100ml water
1 vegetable stock cube
75g egg noodles
thumb-size root ginger, chopped finely
¼ tsp ground turmeric
¼ tsp hot chilli powder
squeeze of lemon juice

Tangy Tofu Pasta




Ingredients

10 lumaconi
125g silken tofu
juice of a medium-sized lemon
juice of a small lime
half a medium-sized onion (about 60g)
1 garlic clove, grated
100ml light coconut milk
200g can of tomato pulp
2 tbsp soy besciamella (Bechamel sauce)
1/4 tsp oil
1 tsp dried basil
ground white pepper

Chunky Carrot & Leek Soup

500ml water and some extra for leeks
2 vegetable stock cubes
125g frozen baby carrots
1 medium leek (approx 85g)
½ tsp dried tarragon
½ tsp dried sage
¼ tsp dried rosemary
